A Camper's Cookie for Christmas

I tried out a new cookie recipe that I found online and it’s quite appropriate for the camping community. It’s a s’more cookie.

My cookies didn’t turn out quite as beautiful looking as those pictured on the website, but they taste great. I don’t think I used enough dough on each cookie because I ended up with 41 cookies. Here are a couple of pics of how my cookies turned out. The first photo is the raw cookie dough on the graham cracker and the second photo was taken as they were fresh out of the oven.

Time to revisit this recipe.

I’m sure we’ve all been to campgrounds or RV parks that didn’t allow campfires. Try this cookie recipe to satisfy that desire for s’mores when you can’t have the real thing.

I have discovered I like these cookies better if I leave them slightly under baked.

It says line pan with parchment paper. Don't have any here at the CGs.
Can you use Pam instead or something else?

The only thing that will stick to the cookie sheet will be any cookie dough that runs off the cracker during baking. The Graham cracker shouldn't stick. If you use Pam, spray the cookie sheet and then lightly wipe off the excess.
