a spin on parmessan chicken in the RV

serves 2
2 boneless/skinless chicken breasts thawed
rosemary 1/2 tsp
thyme 1/2 tsp
parsley 1/2 tsp
dash of sage 1/4 tsp
fresh parmessan cheese, grated (this is important, not the pre-grated stuff in a plastic jar)
2 tblspoons of butter
package of your favorite pastsa noodles,
1 (12 oz) can of your favorite red pasta sauce, with or without mushrooms (no meat)
virgin oil oil
large skillet, preferably stainless or no stick
large pot to cook the pasta

wine as needed by the cook
prep 15 mins
cook time 30-45


coat a large skillet liberally with oilive oil
bring heat up to low to get oil working and pan hot

bring pot up to boil with water, no butter or oil

open pasta sauce
cut up chicken in strips about 3" long
place in bowl and add the seasonings, toss chicken to coat evenly

place chicken in hot skillet, keep the heat on low to med to just turn the chicken white on the bottoms but not browned, move em around as required

when water boils add enough pasta for 3 people

as chicken begins to take on it white side turn it over and let it cook on the other, add spoonfulls of pasta sauce on top of each chcicken piece to coat it as it cooks. but not over coat to the point it runs off.

also add some grated parm to each chicken and let it melt

its critical not to get the chicken to hot, just hot enough to cook, low/med heat if its a gas stove.



check the pasta for doneness. drain and let stand add in butter and let melt

turn chicken again and recoat with sauce and parm. may have to stir more now as the chickens should be getting close to being done and turning red from the sauce, with light coating of melted parm.

cook 2-3 more minutes to ensure doneness
spoon in the remainder of the sauce slowly, while stiring chicken around gently, then toss in the cooked pasta and combine the chicken and sauce with the noodles, ensuring the sauce is heated and the noodles are coated.

ramp up heat to high and cover for 45 seconds

cut off heat and add remainder of grated parm
cover and let stand 2 mins.


place on plate and eat up

i would add a nice peiece of garlic toast and a nice fresh salad with romaine lettuce and veggies makes this an eating delite

sounds like a lot of mess but i cook it often on our three burner rv stove.

This sounds like a great recipe. Normally my DW would do a recipe like this however, since the recipe calls for "wine as needed by the cook" I'll take care of this one.

i hear ya
a little libation alwasy help with the cooking
getting ready to do Ribs out side , i have actually dne the chicken on the grill outside as well, using the side burners, drives the campground nuts
