So I went back to the pellet grill.

Well, I have two upright smokers at home, but I do not want to have to lug them around while camping so we were looking for something "tabletop".
I have NO doubt your pellet grill will do a superior job, but I am cooking for 2 people, not an entire tailgate crew.
I also don't mind the cleanup if it does a good job cooking. Charcoal is EASY to clean up, but I also want EASY cooking so propane is it for us!

So due to popular pressure I enhanced my GMG collection to include the Davey Crockett.

I’ve been prowling the meat section at Costco looking for a brisket to try, but they were sold out the last few times we were there... The ones I saw previously were massive, it might take some work to fit on my medium Egg.

Have noticed the group cuts of meat at Costco. Checked with butcher at Kroger and found out the morning they get deliveries. They will cut brisket to size you want. I generally get 3/4 pound to a person plus a pound or so for heavy eaters.

The brisket in my pic is from Costco. Only one I ever got to turn out right. It was delicious and fit on my Davy Crockett. They did have some varying sizes.

So I finally got to Costco on the right day and picked up a 10 pound brisket. I seasoned it with mustard, Montreal steak spice and chilli flakes. Stuffed it into a lasagna pan so it would fit on my medium egg and set the pitboss for 250f. Before adding the meat I threw a few pieces of red wine barrel staves (white oak) for smoke.
8hours later I removed the brisket and wrapped with foil. Return to egg and continue cooking at 250 for 3 more hours till meat hit 204 and was probe tender. Then I wrapped in towels and placed in microwave (don’t have a big enough cooler) to rest for 4 hours.
End result, I am happy with. Very tender and flavourful. Being an overnight cook, I was a little late with the wrapping phase as meat temp was over 170 in spots. I would not call this meat dry, but think this negatively impacted the juice factor. Furthermore, the Montreal steak spice was a bit too much salt. But I’m going to count this as a win, and I will be smoking brisket again! Great meal with homemade baked beans in the instant pot!

W5CI,
Brand new to Rving but an old head at using a Kamodo type grill (since 1976). So spoiled I won't use anything else. Sooo, how about some details about how you operate on the road with the mini. I use a Large BGE at home. Where do you put it when on the road? Did you get the carry handles? Any pics?
Thanks,
Blasko

Don't take my smoker with me while camping but I do take plenty of smoked meat. Just finished a couple of turkey breasts. When finished and cooled they went through the slicer and into vacuum bags, sealed, and frozen. One will end up on my Daughter's Thanksgiving tale and the other will travel with me in January.
I've found I can quick freeze in vac bags then reheat in the bag using a Sous Vide water bath. Water temp at 145 degrees will thaw and bring to serving temp in a couple hours totally unattended with no loss or flavor or "juiciness".
The heater for the water bath is a lot smaller and lighter than my smoker
BTW, ribs get done this Sunday and then the same treatment so I'll have them for January.
A smoker is one of those essentials. Home cured ham, brisket, sausage, ribs, turkey, chicken, cabbage (great side for a dinner), cheese, and even some smoked sausage stuffing for Thanksgiving dinner.

I have a 14.5" Weber Smokey Mountain bullet smoker . It fits perfectly in my storage compartment located next to my entry door. I keep it stored in my 5er permanently as I have the larger 18" one at home. This unit is light weight, 24lbs and approx 30" tall, it's easy to set up. I love smoking ribs and pork shoulder. It always draws attention and nice comments from nearby campers. I would highly recommend this smaller size smoker for the R.V. It has a small water bowl and two grill racks. Perfect for camping. Don't the forget charcoal and your favorite wood chunks. I purchased this unit at my local Wal Mart for $100.00.

My niece (grand-niece, actually) and her husband hosted the annual family Christmas dinner yesterday and Patrick smoked a prime rib in a Green Mountain Daniel Boone grill. Had to come back to this discussion to say how good it was. Wonderful is a better word. One of the best prime ribs I have ever tasted. Green Mountain Davy Crockett grill, here I come.

We have the mini max that we take camping and absolutely love it! It’s so versatile because you can smoke, grill, or bake anything, as is depicted, above. People complain about the cost, but the Green Egg will last you a lifetime and beyond. We’ve had them passed down to family members upon death. Why limit yourself to just a smoker?
