Good not great. Got some sausage making supply's from Santa that included some casings and a stuffer. Tonight I tried a different Budain variation than I have tried before. Not sold on it. Need a real Lousania Boy to share the secret.
I wish this Louisiana boy could help you, but that's one thing I have never made. We have several real Cajun cooks on these forums and maybe they will chime in after they read this. Boudin is a lot more popular in the southern part of the state than the north where I am at. It doesn't look like you did bad for your first go at it on your new gadget.
The only assistance I can offer is I changed the title to the proper spelling of Boudin.

Well....finally got it. Links are the key. Kitchen aid mixer with sausage stuffer were the solution. Forget the fried balls....some saltines and hot sauce is where it's at!
Get some boudin balls at Billy-Ray's in Opelousas. You will think you died and went to heaven.
