Breakfast
i was reading through the recipes here and i did not see and breakfast recipe's. maybe some of you just skip that part.. ha ha. here is one i have made a couple times while camping. i usually just make it in a dutch oven. it will usually feed an army if you make it right
Eggs, Boat
it's been a long standing tradition for me to make "boat eggs" at the races and anywhere else for that matter. here's the recipe...
INGREDIENTS:
1 lb pork sausage, bob evans/jimmy dean/smoked fattie
1 can chopped green chilies
2-3 Tbs butter
1 package hash browns, bob evans
8-10 eggs
2 cups shredded cheese
Procedure:
1 brown sausage (or add smoked fattie slices and break up and heat) in cast iron skillet direct at 300.
2 add chilies and stir
3 add hash browns and butter and toss
4 cook till hash browns just start to turn brown on the bottom, then toss and flip and cook some more. maybe 20-30 minutes total.
5 add eggs and fold in while breaking yolks.
6 cook till eggs are no longer runny, maybe 20 minutes.
7 add cheese evenly over top.
8 when cheese melts, take off heat and let rest for about 10 minutes.
9 serve with can-o-biscuits baked on the egg
10 cheese, glorious cheese!

That sounds about like the breakfast we make during campouts. The biggest difference is that I bake the biscuits in their own DO while I'm cooking the rest and I don't use canned biscuits.

I actually cook on an open fire. We almost never cook "in the camper". I can cook 3 or 4 DO's on the pit if I need to. Most of the time it's just two.

i was thinking i don't even have a rolling pin in my camper.. maybe i need to put one in especially for a sausage cheese roll.. oh well guess i need to make room

thanks for reading and trying something that i brought to the table. this place has such nice people. they know soo much abut camping. me i know enough about food to make me fat.. and the other that follow it just makes me feel good to contribute,
i have even gotten creative and added some red bell peppers and once some jalepeno

I made this and used jalapenos along with the green chilis and then added some pepper jack cheese mixed with med cheddar, it turned out great!!

i like the sounds of that.. although i will have to try to make it that way when the wife is not around.. she does not like the heat..

you guys are making me hungry
we usually at the start of short trips, the first night cook up a big block of bacon for breakfast and sandwiches, the smell really draws em in,
then in the am just nuke em for a few seconds and add eggs

when you say a big block are you cooking your own pork bellies and slicing them? or are you talking about a big pack of bacon.. reason i ask is i have seen a few threads on another forum where they are making their own bacon from pork bellies but i am unablle to get that cut of pork here.. i have two boxes of Buckboard bacon cure http://http://shop.himtnjerky.com/on...p?productid=25 i want to make but since we lost our outside fridge i am a little pressed for room. i think it would be great out on the site..

big block of slice bacon
usually find it much less $$ to buy a 3 or 5 lb brick of thick sliced
its last about a week......it goes on burgers, samiches, eggs, with oatmeal, bagels etc

that is a great idea you can never have enough bacon around.. i have taken thick sliced bacon and mix brown sugar and cyanne pepper. put the sugar pepper mix on the bacon and let it cook till the sugar starts bubbling.. pull out of your cooking device (i have a green egg with indirect heat which is like a charcoal oven). let it cool down it will stiffen up.. it is called pig bacon...
good enough to put in the camper and snack on like beef jerkey.. and a heck of a lot less expensive
