I make "breakfast burritos" much the same way, using flour tortillas, and YEP, LOTS of SALSA!
i would use cheddar also. i put a little milk in my eggs to make them a little fluffier.
the salas would add more flavor

Thanks everyone, that's all we needed. Just helps to have a few basics before we take the trip down 'Make it Your Own' Lane .

Yes, YES it would besides I care not for the taste of Tabasco.

Different strokes for different folks FI.

Take "sweetbreads" for example. Such a nice appealing name. No way I'd ever eat that...unless *maybe* if I was at death's door from starvation.

Yet I'll eat crawfish 'til I'm gut sprung.

FTR, Sneak prefers Crystal Hot Sauce. If I had it handy, I'd go with Mae Ploy Sweet Chili Thai Sauce*. I think dirty socks dipped in that stuff would taste good!

* It's difficult to find and my one source locally sells out within a day every time they get a shipment in. SO, yes I do have a recipe to make my own, and yes I go by that recipe......except..........I'll tweak the quantity/amount of some of the ingredients.

Sounds good! 'ceptin' I'd have to make some with bacon for DW... she's not a sausage person.
And while I think the salsa would be fantastic, I use a spicy sausage. Along with the pepperjack, that should just about do it.

My Recipe Journey: Egg Boats

Ahgg, not mine I just C&P'd it.

Ingredients:
4 demi sourdough baguettes - I used 6 inch hero rolls
5 large eggs
1/3 cup heavy cream - I use light cream or milk
4 ounces pancetta, finely chopped and fried until crisp - I used bacon or packaged bacon bits
3 ounces gruyere cheese, grated - I used cheddar
2 green onions, thinly sliced
salt and pepper to taste - I use a pinch of each for each egg

Chorizo, I make my own, instead of the sausage, add some chopped jalapenos and cheddar cheese for me.
