Christmas Eve "Roast"

20# of pork shoulder hitting the smoker tonight at 10pm. Bit windy this evening and I am a little concerned about pit temps. Wait and see.Click image for larger version

Early Christmas morning, I'm throwing a smoked ham on my new egg (Kamado Joe) for our Christmas feast. First time for me and I hope it goes well.

I just saw your pics and now I am torn. I am planning on doing a low country boil. Todays ads are full of seafood sales and STL weather is warm enough to do it all outside tomorrow. The grand kids love messy food. Me, I just want the lobster tails.

Rock steady at 225...big wind tonight. Ceramic or an insulated cooker would be nice. Click image for larger version

I hope you had the foresight to prepare a beverage of choice to "steady" yourself during this mission.

I anticipated the need, and my friend James Beam has stopped by. He said he will likely leave by midnight pending all is well with the pit.
