Christmas Eve "Roast"

Early Christmas morning, I'm throwing a smoked ham on my new egg (Kamado Joe) for our Christmas feast. First time for me and I hope it goes well.

I just saw your pics and now I am torn. I am planning on doing a low country boil. Todays ads are full of seafood sales and STL weather is warm enough to do it all outside tomorrow. The grand kids love messy food. Me, I just want the lobster tails.

Getting the finishing touches ready to help my wife prepare a 21 pound Prime Rib dinner for the family on Christmas Day. In the meantime, have to settle for Shrimp, cheese platters, kielbasa, swedish meatballs for Christmas eve. And of course copious amounts of Egg Nog for both days. I don't know what to do with this unexpected 70 degree weather in CT. Usually snow on the ground with 20-30 degree weather. Ohh well, guess it is a shorts day for us.

DH is going to smoke a duck for dinner tomorrow. He's really gotten into using the smoker again after it sat idle for a couple years. We have a Bradley electric with the auto feeder - works great!

Congratulations, JohnF.

I own a Kamado Joe Big Joe and a Joe Jr. I really love these cookers.

If you haven't cooked on it yet, there is a bit of a learning curve. Take your time, and allow the ceramic to heat soak and temp stabilize before you put the ham on to smoke.

Back back only becomes an issue with certain chores.....setting up egg was easy

We have a large green egg we use at home. Best cooking ever, so earlier this year we bought the green egg "mini-max" for camping. Love it, heats up quick and have many great meals on it this year.
