Crockpot Potato Soup

Iím always looking for recipes that taste great and require very little preparation thus maximizing our camping/RVing time. I found this recipe, tweaked it, and tried it out tonight. Delicious!

Easy Peasy Crockpot Potato Soup Recipe

Ingredients:

1 (32 oz.) bag frozen hash-brown potatoes (Squared, southern style)
2 (14.5 oz.) cans chicken broth
1 (10.75 oz.) can cream of chicken soup
1/2c chopped onion
1/8c Hormel Bacon Pieces (not bits)
Ĺ tsp. ground black pepper
1 (8 oz.) package cream cheese (softened and cut into 8 pieces)

Garnish: minced green onion and bacon pieces

Directions:

1. In a slow cooker combine potatoes, broth, soup, onion, and pepper.

2. Cover and cook on low for 5 hours.

3. Stir in the softened cream cheese and bacon pieces, cook an additional 45 minutes stirring occasionally until combined.

4. Serve in a bowl and garnish with green onion and more bacon pieces.

I made it this last weekend and it was very good! I roasted some garlic and added it in. Took a littler longer than expected, but not a problem. I'll be doing it again.

I like the addition of garlic to the recipe. I think I'll try that the next time I make the soup.

Sounds like a great North East fall time meal when there is a chill in the air,the leaves have all turned and your sitting by a nice camp fire hoping the season will never end.Wow,talked myself right into that.Thnx for the recipe,cant wait to try it.Might try it in the dutch oven to.
