Crockpot Potato Soup

I’m always looking for recipes that taste great and require very little preparation thus maximizing our camping/RVing time. I found this recipe, tweaked it, and tried it out tonight. Delicious!

Easy Peasy Crockpot Potato Soup Recipe

Ingredients:

1 (32 oz.) bag frozen hash-brown potatoes (Squared, southern style)
2 (14.5 oz.) cans chicken broth
1 (10.75 oz.) can cream of chicken soup
1/2c chopped onion
1/8c Hormel Bacon Pieces (not bits)
½ tsp. ground black pepper
1 (8 oz.) package cream cheese (softened and cut into 8 pieces)

Garnish: minced green onion and bacon pieces

Directions:

1. In a slow cooker combine potatoes, broth, soup, onion, and pepper.

2. Cover and cook on low for 5 hours.

3. Stir in the softened cream cheese and bacon pieces, cook an additional 45 minutes stirring occasionally until combined.

4. Serve in a bowl and garnish with green onion and more bacon pieces.

I made it this last weekend and it was very good! I roasted some garlic and added it in. Took a littler longer than expected, but not a problem. I'll be doing it again.

I like the addition of garlic to the recipe. I think I'll try that the next time I make the soup.

Sounds like a great North East fall time meal when there is a chill in the air,the leaves have all turned and your sitting by a nice camp fire hoping the season will never end.Wow,talked myself right into that.Thnx for the recipe,cant wait to try it.Might try it in the dutch oven to.

Cooking time varies depending on your crockpot. When I make this soup with the crockpot we have at home I have to increase the cooking time to 6 hours.

The last time I made this soup I added some shredded sharp cheddar cheese on top of the onion and bacon bit garnish.

Another variation that is great for this is to use the frozen O'Brien potatoes instead of the southern style. Get onions & peppers with it.

First camping trip of the year is scheduled for March. I will definitely be making this for those "still cool" evenings. Sounds wonderful!
