Easy Texas Chili

1 lb. of 90/10 hamburger
1 lb. of unseasoned sausage
1 box of Carroll Shelby Chili spice mix
1 medium size jar of Pace Chunky Salsa
1 8 oz. can of tomato paste
1 14 oz. can of diced tomatoes
Brown the meat
Add the spice packets
Stir while browning
Add the Salsa and Tomato products
Bring to a boil, then reduce to simmer for 20-30 min.
Use the Masa packet to thicken to taste.
Use the Dark red spice packet sparingly to taste
Kidney beans can be added but don't tell anybody from Texas

Makes enough for 4-6 and freezes for reheat if any leftover

I keep hearing about what a no-no it is in Texas to add beans to chili but gosh darn I was born here and I love adding beans to my chili. I suppose maybe I wasn't raised right, lol! 😜

My recipe is similar but I use Rotel instead of Pace and I prefer black beans instead of kidney beans, I add green chilies and mix my own spices. 😊

Two things you can't / don't do

1) Live in Oklahoma and make Texas chili (unless you were born in Texas and moved to Oklahoma)

2) The "Cardinal" sin of making chili is putting beans in it

Nope, no beans allowed.....use any kind of meat known to man from snakes to buffalo but no beans.....

To be fair I do live in Houston, maybe that's not considered true Texas? I don't know, all I know is what I like to eat

But chili without beans just simply is not chili!!!! Then it just becomes some sort of thick hamburger soup!!

I put beans in my chili guess I haven't heard that about my Texas chili. No one has ever complained about my chili except make more next time. LOL

Ok for a true bowl of Texas Red I use this recipe and make variations of it. It's called Bad Attitude Chili from a BBQ and/or chilehead list I was on in the last century.
  • 2 lbs pork roast -- cut into 1" pieces
  • 2 lbs cheap ground beef -- (You'll need the fat. This isn't health food.)
  • 1/2 cup GOOD chile powder -- (Your local supermarket brand tastes like cardboard.)
  • 1 HUGE onion -- roughly chopped
  • 1 head garlic -- minced
  • 8 New Mexican green chiles -- roasted, peeled, seeded, chopped.
  • 1 Tbl hot Hungarian paprika -- (This is legal. Paprika is a chile.)
  • 1 Tbl ground cumin
  • 4 beef bouillon cubes
  • 1 28 oz can crushed tomatoes -- (Don't worry. You won't even know they are there.)
  • 1 bottle amber Mexican beer -- (Dos Equiis, Noche Buena, or any Oktoberfest will do.)
  • 1/4 cup bourbon -- (This is one of those things that just happened.)
  • 2 squares bitter baker's chocolate -- (Not as weird as it sounds.)
  • salt to taste

Saute 1/4 of the garlic and onions until translucent.
Add 1/4 of the meat, chile powder and brown.
Salt the meat while cooking. Put into your chili pot. Cast iron is best.
Repeat until all the meat is done.
Put the rest of the ingredients in your chili pot and simmer for an hour.
As in any recipe, the amount of ingredients is variable. Add more of anything you want, especially chiles.

Most of the time I use Penzeys chili seasoning and canned Hatch diced green chiles. It's a lot of labor to peel those things and I like a lot in mine.

Awesome recipe! I would just add black beans, LOL!!!

i don't bean but I don't look down at those that do, I just avoid the downwind side of those that do!

I get a lot of comments about tasting chocolate in it, i never do but some folks do. As most chili and stews go, the longer it simmers the better it gets!

Haha! Beans or no beans, there will be gas, lol! But I'm glad to know that since I do use beans, that at least black beans are acceptable

I still say use whatever floats your boat and when it comes to chili, you very well might be able to, hehehe

Can't wait to try out the chocolate idea
