LOVE my dutch oven and cast iron cooking. I have cooked many meals and desserts through the years with Boy Scouts and while RVing. The most recent favorites was brats and ale....I pre heat the oven and coat the bottom in light olive oil. I then braise the brats...add a bottle of Reds Apple Ale, onions, carrots, potatoes and sweet peppers and cook for apx 30m. Coals on the bottom only.
The kids love dutch oven pizzas. Again, I preheat the oven with coals on bottom and top. Use small boboli crust. Each person can customize their own...typical ingredients include pizza sauce, sausage, pepperoni, cheese, onion, jalapeno etc.. The secret is a trivet on the bottom to keep the crust from burning. Once the oven is pre heated it takes about 8-10 per pizza.
I also have cooked a few pot roast meals. I pre heat the oven, braise the roast then add the veggies and broth. I do use a tripod and adjust the height above the coals to control my heat to ensure longer cooking times. The meat is more tender if you pre cook at home
I also love my camp chef dutch oven table. Holds up to three large ovens and no bending over
