Airbake pans have a tendency to leave the bottom a bit more done in my experience. The first thing we baked in the oven was bread which turned out picture perfect (and quite delicious). The pilot light of course makes a handy place to get yeast doughs to rise. I did a cake last week which similarly was perfect and have done a couple of pies. All of the items have been evenly browned without having to rotate midway through the baking time. I don't have a baking stone in the bottom and so far things are working out pretty well. The pans I've used are either glass or "Baker's Secret" so nothing fancy.

Hmmmm....food for thought. (pun intended ) I don't think I could fit a loaf pan in my small oven, but foccacia and french baguettes are a distinct possibility. They would smell heavenly in the cooler months!
