Bust out a couple of dutch ovens and the options are endless 2 12 should do the job easily

Mississippi Pot Roast. Recipe is easily found on line. Cook 8 hours in a crock pot. Two to three would do, plus fresh salad, veggies, baked potatoes, and crusty rolls with butter for soaking up the sauce. Brownies and ice cream for dessert, or Dump Cake.

Thanks everyone! I'm hungry and ready to camp... Great ideas. I'll let you know what the boss's decision is. Place we are staying actually makes fresh pizza in their bar. She'd kill me for that!

Boil 3-5 bags of crawfish. They're plentiful this year. Add small corn on the cob and new potatoes.
One pot, no dirty dishes if you put the cocktail sauce in styrofoam bowls.
I'm doing 1000 lbs tonight.

IF you can buy, beg, borrow, or steal a good pellet smoker........smoke a big Boston Butt pork roast, and get some buns and BBQ sauce......... learn how to pull it after it hits 195 degrees internal temp, and be a hero.

A good an easy side dish is cheesy taters in the crockpot but you could also use a dutch oven. You would have to triple the recipe for your group.. I fed 12 sheriffs deputies thruout the day at the fair and a doubled recipe didnt last 2 hours.. (DH and Father in law are reserve deputies)
26 to 32 oz bag frozen hash browns any style can even use the southern chunks
8oz sour cream
10.5 oz can cream of chicken soup
1/4 cup fine diced onion
1 1/2 cup shreaded cheddar cheese ( any cheese works i have used the taco kind before) and I usually just use the whole 2 cup bag of cheese
1/2 cup butter, melted
1/4 teaspoon each salt / pepper
mix all and put in crockpot .. Really spray that pot or use the crockpot liners it does stick to the sides.... cook low 4-5 hours till brown an bubbly an taters r done.. If using a regular oven 350 for 45-55 min. serves 10-12

Try something cajun

I'm not sure what part of the country you are in, but if down South, sausage jambalaya is always a big hit. I normally cook it up in a large electric skillet and transfer to a crock pot to keep it warm for serving. Use Tony Chacherie's if you like it spicy or use Zatarains for a milder flavor. Use hamburger or hotdog buns buttered and sprinkled with garlic powder and Italian seasoning and toast in your oven .... makes an excellent garlic bread to go with the jambalaya. If the packaged boxes of mix aren't available in your area, get back with me and I'll post the recipe.

Just did this for about 20 at Florida's Juniper Springs campground - Low country boil. Shrimp, sausage, corn and potatoes. Everything goes in big pot and can add extras as needed. Cook everything together, except shrimp. That goes in last for only about 4 minutes. You will be judged for how well the shrimp come out!

My kinda thread! Skin-on Teriyaki Chicken is always a crowd pleaser, especially if you can grill it with a bit of char! Marinate it for days...yum! You could serve it with fried rice or ramen salad. Fun!!!

My wife and I cook for a volunteer trail crew on the Pacific Crest National Scenic Trail at least once each season (summer) when the crew is working near a trailhead. I'm going to try attaching a file of menus we've found to work well. We usually cook for up to 20 people, but use table top or free standing stoves to prepare meals. Hope these give you some ideas. Of course if you would like to join us for a project, drop me a line. We do our projects in August as a rule, but the date is dependent on how much snow is still on the ground!

Chicken Tikka is a fun campfire food

Grilled Chicken Tikka - BarbequedChicken

You can buy bags of 10 frozen pieces of naan bread together if you go to a store that caters to Indian folks. Better grocery stores also sometimes have it in the bakery, but Walmart only carries it pre-made and its really expensive there.

Make some mint yogurt sauce to go with it

Sauced: Yogurt Mint Sauce | Serious Eats

Delicious. And you can eat it standing up - put a couple chunks of chicken in the naan, spoon some mint yogurt on top, fold naan around it like a taco.

If you go the spaghetti route if you have a stove with a good sized grill you add garlic bread to the mix by slicing the loaf lengthwise in half. Smear the cut sides with garlic butter & place on the grill long enough to lightly brown the bread. Put the halves back together & slice the loafs. Easy & fast garlic bread.
