Labor Day Weekend Cooking

What's on your menu for camping this coming weekend? We will have our Big Green Egg with us and I was going to try to do a pot roast in the Dutch oven.

Pork butt roast cooked in crock pot then pulled, BBQ sauce added with seasoning then vacuumed packed in sections to serve 2 and put in 5er frezzer. packets pulled as needed for lunch on the road....served on a bun in a checkered paper lined basket with chips and a pickle...no mess.

Now for the destination Menu at Gulf shores Alabama. Baked fresh red snapper fish squeezed lemon, seasonings served with home fries, salad and red wine...Yeah!

Next day.....16 Oz grilled rib-eye, baked potato, bush beans and lots of beer followed by a nap on the beach

haven't decided on the remainder 5 days yet, but it will be good.....Is it time to leave yet?

Cooking for about 15 people:

Pork Steaks (I get them thin and grill them fast like a beef steak)
Fried potatoes
Baked beans.
Caesar Salad.

Good Stuff right there.

Don't need lobster helper, but try using Tuna helper for the leftovers. We have done that for leftover crab. Pretty darned good!

Pork Butt Roast, bone-in - not the Picnic style - dusted with seasoning mix. Smoked for 2-3 hours over coals with hickory wood chunks soaked overnight in red wine. Then......remove roast and place in an electric turkey roaster with a couple of cans of your favorite beer and braise on low temp for 8-10 hours. Meat will fall off the bone and shreds easily. Serve in Kings' Hawaiian rolls with your favorite BBQ sauce. Add cole slaw and Bush's beans and watch the smiles all around!!

Pork sirloins cooked on top of bacon in the crockpot, then shredded one night for pulled pork sammiches. Canada caught salmon and dungeness crab one night. And beer, can't forget the beer.

Prime rib and a couple of beef roasts in the smoker with grilled veggies on Saturday.
Sunday we'll do a fish fry (flounder & mahi-mahi) with hush puppies and fresh corn on the cob.
Monday it's back to the smoker with ribs, Boston butt and smoked mac & cheese.
Last big hurrah of summer!

We had about 16 people over had two other campers join us at the North acres had a couple of friends strike up so early music
We put a pork button on the smoker on saterday had pulled pork funeral potatoes fresh apple cake and a great time
