Over the fire

I love cooking over the fire as much as i can when we are out camping. My wife is getting tied of my usual favorites.......

Just curious what are some of the items you cook over the fire so maybe i can change it up for my wife.

Blacken chicken is a favorite. French bread pizza is a easy one we like to use on day one of camping. Fajitas with mesquite(sp?) skirt steak, onions, red peppers. Now see what you done? I'm hungary! Sometimes we just get Chinese and call it done. Shh don't tell, they will pull camping card.

I have done,

-Burger and dogs (that's our usual arrive day dinner)
-Chicken (bone and boneless) and all sorts of different seasons depending what we are in the mood for.
-Steaks are my favorite.
-Kabobs, assortment of different set ups on them.
-Bacon, scapple, and hash browns.
-all kinds of veggies as well, corn cob, broccoli, etc.

I guess i'm looking for just something different. I can go on any website and look up grilling but looking for fello camper suggestions.

I haven't done much in a cast skillet, i try to do all direct over the fire. Hash and eggs i have to do on skillet but that's about it.

We make what we call "hobo burgers" all the time. Take an uncooked hamburger patty, put carrot slices, potato slices, a pat of butter, and a little bit of dry onion soup mix on top. Fold it all up in some aluminum foil and throw it on the rack. Cook until the burger is done and the veggies are soft.

Another good thing is to slice some potatoes in half and add a little butter, some salt and pepper and maybe an onion slice. Wrap that up in aluminum foil and place them around the edge of the fire.

We have done the ol Boy Scout trick by putting a hamburger patty along with corn, and hash brown potato's and wrap in Aluminum foil and place in the fire.
We have also thrown corn on the cob in the fire while still in it's husk or wrapped in aluminum foil. Usually have to turn it often to keep from burning.
Baked Potato's thrown in the fire wrapped in Aluminum.
Made stew over the fire in a large pot.
Still looking forward to our first camping trip this year. We visit our RV every week, just haven't taken it from the storage lot yet. Need to put a date on the calendar and do it.

Hobo burger sounds pretty good right about now.

I think this coming weekend ill shoot to do ribs and see how they turn out, i'm not a big rib eater but ill give it a shot. Thoughts on how long a rack takes to cook over a fire? I know a big debate would start if i ask what to put on it but i do like a dry rub by Meadow Creek made by a local Amish outfit.

Thanks for all the idea's, i do have a few noted that i will be trying.

Veggie packets with sliced potato, carrot, onion, and green pepper, salt and pepper, or whatever seasoning you like. Cook in aluminum foil packet. At the very end of cooking, open the foil and place sliced cheddar cheese on top - close the packet and let the cheese melt (off fire) for a few minutes.

Now, if you are using cast iron, you can do a whole lot of things. Diced sweet potato, diced onion (fairly large pieces), and sliced chicken, apple, and Gouda sausage. This makes a terrific breakfast hash. Hand made pizza using store bought pizza dough, sauce, and whatever toppings you choose. Soups and stews of all kinds. Chicken wings. Check out Pinterest for a lot more ideas.

Even though it was pushing 100 degrees i still tried the ribs over the fire. They actually turned out better then i thought and will be doing it again. It took 3 hrs but well worth it.

The DW and I love to cook pizza on the fire grill. Add what you like meats, sausage ETC with sauce and cheese. We have found a premade pizza that will stand up to fires and not get limp at Walmart. Our grandkids love these all the time.

we cook, steaks, ribs, chicken, wings, grilled cheese, hot dogs, hamburgers, etc. Just about whatever fits on the grate over the fire pit, we cook it. I prefer that then the grill
