Polynesian Chicken

Polynesian Chicken
(NDJollymon's Specialty!)

Marinate: 2-3 hours at room temp. or up to 24 hours refrigerated (I prefer the 24 hour method!)
Cook: 45 minutes.
Serves: 4

1 - 3-Lb. chicken, cut up. (I like to use chicken breasts)
¼ - cup soy sauce
¼ - cup Pineapple juice
1/3 - cup brown sugar
½ - teaspoon powdered ginger
¼ - cup vegetable oil

1. Rinse chicken in cold water and pat dry; arrange pieces in a glass baking, or marinade dish. In a small bowl mix the rest of ingredients together and pour over chicken. Cover dish and marinate, turning chicken occasionally. (a large storage bag works nicely for camping!)

2. Prepare a hot grill. Remove chicken and place skin-side down on an oiled grill, reserve sauce. Grill, turning once, until chicken is browned on both sides. (about 15 min per side) Brush with sauce and continue to grill, turning and basting frequently, until chicken is cooked through with no traces of pink near the bone. (about 15 min longer)

NDJollyMon's hints: I like to marinade the chicken overnight in the refrigerator. I usually add (at least a cup) extra of pineapple juice to the mix, and a little extra soy sauce as well. It doesn't have to be exact. When cooking, I usually brown the chicken on both sides and then cook it indirectly for the remaining time so it doesn't get too black. The brown sugar makes it get black pretty fast. Eating the chicken with a Jimmy Buffett CD cranked up, and an ice cold CORONA doesn't hurt either!

Well, I'll never loose any weight eating like this. I marinaded the chicken over night, and put it on my showtime rottissery 45min. and Mmm it was good. '71 wife thought it was great too, but '92 son was at a friends house. He sure missed out. We cooked the chicken while we went for our evening walk, then came home and made yellow rice. A fresh pitcher of sweet tea and life is good. I look forward to trying more of your recipes, and I'll have to think of something to share.

Glad you liked the recipe. It really is a good one.

Maybe you could school us Northerners on the sweet tea? I hear about it from time to time.
I drink brewed iced tea with wedge of lemon.. Nothing sweet in it. Is your version just sweetened with sugar?

"real southern sweet tea" has a whole cup of sugar per gallon of tea, I use about half a cup. The key is putting the sugar in the pitcher first, then adding the brewed tea then cold water. I have never been able to get sugar to dissolve in cold tea, it's either made sweet tea or I drink it un sweet. The only problem is it has a "shelf life" after a day it starts getting stale tasting. I can refrigerate it and drink it, but my wife won't drink it once it's been in the 'frig.

You make it by the gallon? Heck, I make tea by the cup!
The only time I make that much is when I can brew it in the sun. (which is about 3 months per year here!)

How do you make it by the cup? I use a coffee maker and two family size lusianne tea bags. I put the sugar in the pitcher, pour the hot tea over it, add cold water, and stir. The three of us can go thru two gallons a day on the weekends, and usually a gallon each night after work.

I use one of these:



The tea comes in K-cups...or I use a tea bag and just use a water drop from the Keurig machine. It makes a cup of gourmet coffee or tea in about 30 seconds.

I just didn't know what sweet tea was. I drink it without sugar. I have three of these machines: One at home, one at work, and one in the RV.
