Radio's Shrimp and Spinach Soup

Made this up myself and surprised Sweet Wife with it this evening. Went over pretty well.

•1/2 stick Butter
•Minced garlic
•Old Bay Seasoning
•1 can cream of mushroom soup and 1 can milk
•10 oz. chicken broth
•1/2 pound fresh, raw shrimp
•big handful of fresh spinach

Chop the shrimp and spinach. Melt butter in large saute pan, add minced garlic and Old Bay seasoning. Saute shrimp and spinach until shrimp is done. Put half the shrimp and spinach in a blender with 10 oz. chicken broth and process. Pour back into saute pan, add 1 can cream of mushroom soup and 1 can milk. Stir constantly for 10 minutes, do NOT let it boil. If you stop stirring, it will boil! Shut off heat and let it stand a few minutes. Save a few pretty spinach leaves for a garnish. Makes about 5 servings at about 208 calories/35 grams fat.

Thanks, that does sound really good. Do you add the other half of shrimp and spinach after you shut off the heat?

I put half of the sauted shrimp and spinach through the blender. The pan is removed from heat at that time. Then the blender is dumped back in the same pan along with the cream of mushroom and milk. Returned to heat and stirred for 10 minutes or so.
