Rum Balls

Well, Oakman posted a delicious cookie recipe, so I will post a recipe for a cookie that he loves and I make for him at Christmas.

Rum Balls

1 ½ cups toasted pecans, finely chopped
1 ¼ cups finely crushed vanilla wafers
½ cup confectioners sugar
2 Tablespoons cocoa powder
2 Tablespoons light corn syrup
¼ cup Rum

Garnish
½ cup confectioners sugar

Add crushed wafer crumbs to the chopped pecans. To this mixture, add the confectioners sugar and cocoa powder and stir until combined. Add the corn syrup and rum and mix well. Chill if necessary and roll into 1 inch balls. Place the confectioners sugar into a bowl and roll the balls to coat them with sugar.

Store in an airtight container in the refrigerator. These are best if made several days ahead of time to let the flavors mingle.

Serve at room temperature.

Makes about 48 rum balls.

There's a pattern to the recipes that Oakman and I like. Chocolate, caffeine, and alcohol.
