Tortilla Soup
Tortilla Soup
12 inch Dutch Oven or larger, French Oven, or stock pot.
Note: You can cook in Crock pot for 3 hours on high.
Serves 8 to 10
2 medium onions, chopped fine
2 green bell pepper, chopped
2 cups grated cheese
1 26 ounce can (Family Size) cream of mushroom soup
1 26 ounce can (Family Size) cream of chicken soup
2 10 ounce cans Ro Tel diced tomatoes, milder
4 cups chicken broth or 1 box, 32 ounces 99% Fat Free
3 12.5 ounce cans cooked chicken or 3 large cans, 98% Fat Free, diced
½ cup butter or margarine or olive or vegetable oil
Condiments:
1 large bag Tostitos Bite Size white corn chips
1 large tub sour cream
1 large bag grated cheese any flavor
1 bunch chopped green onions
rolls or cornbread or your preference
Saute onion and bell pepper with butter. Cook til tender.
Then add mushroom and chick soups, RoTel tomatoes, chicken broth ,chicken and cheese.
Simmer for about 30 to 45 minutes on stove.
Serve with chips, onions and sour cream. Bread on the side.
