White Chicken Chili

It’s great in the crock-pot, on the stove, or even in a Dutch oven over the fire.
(I tested it in a Dutch Oven over charcoal...mmmmm!)
Make some cornbread to go with it and perhaps a fresh salad, and you have a great meal! Enjoy!

WHITE CHICKEN CHILI
1 lb Great Northern beans, soaked
2 lbs skinless, boneless chicken breasts
1 medium onion, chopped
3 cloves garlic, minced
2 (4-oz.) cans green chilies
2 tsp ground cumin
1 tsp dried oregano
1/2 teaspoon salt
1 14 1/2 oz. can reduced-sodium chicken broth
1 cup water

Directions:
Put beans in medium pan and cover with water. Bring to boil; reduce heat and simmer 20 minutes. Drain and discard water. Cut chicken into 1-inch pieces and brown if desired. Put all ingredients in the cookware, mix thoroughly.
Cover. CROCKPOT: cook on Low 8-10 hours or on High 4-6 hours.
Any other kettle or Dutch Oven: Simmer an hour or two...or as long as you like.
