Winterize Coachmen 21QB

Have a Coachmen/ForestRiver 2010 21QB. Found water drain valves under the cooktop behind the bottom drawer. 3 valves --2 white and one red. Which does what. Instructions in Owners Manual says drain it with vehicle level but I got a lot more water out with vehicle parked on a slope with nose down. Any help with winterizing procedures would be apperciated. This is my first winter.

Do all 21QB's have heaters on the water and holding tanks or is that an option?
