Do I need to use the little slider thing in my fridge?

We have a Dometic fridge/freezer that works great right now and cools down really fast. However, I am not sure if the little plastic slider on the vanes at the top of the fridge is actually doing anything as we have a digital control (settings 1 - 5 with 5 the coldest). Any opinions welcome, and if it does do anything, am I correct in thinking the higher it is the colder the temp?

The 1 thru 5 setting is more of a bias to the thermistor than an actual setting, so the thermistor provides the temp input to controls.

You are correct that moving the thermistor (slider) up the fins causes the fridge to run longer (because the fins are warmer nearer the top) cooling the fridge more.
