I have just installed 2 6V - along with a good marine disconnect switch - and would like to take good care of them.
I am under the impression 6V golf cart batteries will tolerate more of a discharge before sustaining damage, or am I smoking bad weed ?

You're not smoking bad weed. The term deep cycle is a little confusing. The "deep" part of deep cycle is better understood in comparison with a starting battery. A starting battery, like in your car, provides a lot of current for a very short period (seconds) and may never get below 10-20% discharged until the alternator begins to recharge it. It can do this thousands of times.
Deep cycle batteries provide a steady and relatively low current but over a much longer period before needing t be charged. They can do this hundreds of times. Discharges
deeper than 10-20% are the norm, but we still cannot go too low too often or we shorten the life of the battery.
Keep to 50% and above and the batteries will give you years of service

Exactly. My T145 batteries have 260ah, which will give me 4-5 days dry camping until we are at 50% without us being too stingy. This is good, I think.
