Programable Thermostate Operation

It has been over 2 months since we picked up our new 5 th wheel. We are now getting packed up for our first trip.
In checking through the stack of manuals I could not find one for our Thermostat. I looked on line and thing I found a manual.
I stated up the furnace today and have a question about the operation using this Thermostat control to control the furnace and air conditioner.
The thermostat is aDometic Comfort Center 2.
My question is, how do you turn off the systems? One way ( the way I did it ) is to power off the thermostat. Another way is to cycle the mode to off.

Another question is about the fan setting. The manual indicates that in furnace mode there are 4 fan speed selections. Low, med, high and auto. The manual says that in auto the fan is off. Mine is in auto and the fan seems to cycle with the furnace?
Thanks for any help with my learning a new set up.

For the second part of my question, I have since learned that my fan was not cycling when in auto. Just the furnace blower was running. The fan only ran if the fan mode was set for something other than auto.
But I am still wondering how others disable the furnace ( and air conditioner ) ?
Set the mode to off, or power off the thermostat ?
