Suburban stove won't simmer
We're new to Rpods and have a used 2011 172.
Is it normal for the Suburban cooktop to be hard to adjust to a simmer?
Ours seem to be either on high or off and seems very sensitive to adjust to a simmer.

The front burner is your hottest burner so select on of the rear burners and turn to low. Remove the knob and look down the center and you can see a slot to adjust the flame height with a small flat blade screw driver...

Just don't turn it too low.. sometimes when you do that and you open and close the oven door to hard it will blow out from draft since the top is not sealed.

Don't beat me up, but lets make sure you're adjusting it correctly.
On most RV stoves you turn the knob counterclockwise from Off to Lite/Hi and then keep turning it counterclockwise to Low. When I first started out with one of these I thought you turned it to Lite/Hi then back clockwise to adjust the flame height.

I have only two burners and neither control has an adjustment under the knob.

Never one to beat up.....my stove control doesn't work that way. It turns CCW to Light/Hi but then back CW to low or off.

Sorry to hear. Looks like you may be stuck with a hot low setting. I did look up the Suburban 2 burner stove (SD2) and it did not have flame height adjustment instructions.

My solution is a circle of metal under the pot. The piece I use is perforated like the Coleman Camping toaster. Works well.

Yup, a diffuser plate. We have a cast iron one left over from when my great grandmother canned veggies on a wood stove. They still make them.

You have to fool it. After lighting the burner, let it run high for 30 sec. or so to heat up. Then s-l-o-o-o-w-l-y turn the knob towards "off." You will see the flame die down. Stop it where you want it. Takes a couple of times to master the technique but it works. As dalford noted, it will be susceptible to blow outs.
