Got all the way to the camp site at Unicoi outside Helen and the transmission on the F-250 started slipping, and was leaking fluid. Was able to back in and get everything set up, but didn't want to drive the truck until I was able to check everything out at daylight the next day. Ended up calling a cab for a 50 mile $80 round trip over to Cleveland from 10 qts of transmission fluid. (another $100)
Next morning we befriended some of the nicest campers next to us who happen to be a mechanic. They took us to town to shop (we didn't bring food supplies because we planned to do the same once we got here), helped check out the truck, went tubing the river together and cooked out for us that night. My dad ended up coming up to pull the camper home and I was able to drive the truck home without further issues.
Searching some forums I found that the transmission cooler on the 7.3 is small and notorious for getting clogged. Replacing with a much larger cooler on the 6.0
Lessons learned: Big extra supplies (food) regardless, there's still good people in the world, and make the best of the situation at hand
