There are lots of threads about weights any many members who have never actually had their setup to a set of scales to see what everything really weighs.
This pole is not about whether or not you were overweight on either the TV or your trailer, but whether or not what you thought before weighing was actually close to reality.
EDIT: I'll qualify this to say this is for the FIRST TIME YOU WEIGHED.
I have a pretty good idea what my bride stashes in the RV... usually.
I have access to a set of race car scales so I can weigh each wheel. I started doing it back around 2000 with my Coleman Niagara popup. It can be a real eye opener. At least the RV industry has gotten a bit better with the yellow stickers they put on the units, they are a lot closer to reality than the old guestimates. I weigh my units pretty regularly and I am usually within 200# of my best guess.
I came in pretty close. I guessed 6500 on the TT(guessing with math). I weighed in at 6800. I knew I'd be close on the TV. At weigh in, I had 40lbs to spare. I had weighed the TV with just me and a full tank previously so I did have a starting point with that.
I have never been on a scale, and if I had and was over I certainly would not put it in writing.

We had our first weigh at the FROG rally last year. They do a great job! I was surprized that my truck alone was slightly over but the toy hauler was well below maximum.

These are my numbers when leaving for the FL Keys. I'm a Silverado 2500HD Duramax/Allison towing a 34' Aviator with a 50 gallon aux fuel tank/toolbox, 80 lb outboard motor in bed and my DW and I.
I'm well under all the parameters. The Aviator has a CCC of 3,322 lbs per the sticker, which I'm nowhere near. I only carry 6 gallons of water when traveling.

I have never had a problem with the truck pulling the trailer I just don't smash it climbing the hills and I don't hammer it on the freeways I just baby it and it does just fine next year were upgrading the the truck to a Duramax diesel 2017 3/4 ton.
This was the Crusader below hook to 2013 Chevy 2500HD Diesel. I traded from F350 to keep it within manufacture specs.

We don't carry much over 10 gallons of water and just a few groceries. There is usually a store close by where we are camping to get supplies if they are needed. We do carry clothing we will need.

I would like to weigh my rig, but, believe it or not, there is no truck stop scale anywhere in central Louisiana. Next trip i'll see if there is a scale along the way.

Yep. I spend very little time on interstates. There might be a grain elevator around though. I'll ask around.
