So I just got a 1997 f350 crew cab to haul our trailer 2009 gray wolf. Do I still need to hook up my weight distribution hitch? I was thinking I could do away with the bars right? is there a benefit to using them?

Depends on the tongue wt, but you will definitely need some sway control.
Is that a loaded tongue weight or dry tongue weight? What grey wolf do you have? Remember your tongue weight will ultimately be about 13-15% of the loaded tt weight. Figure that number out and then look at your hitch receiver to see what it is rated for weight wise for load bearing (no wdh) and for nonload bearing (with wdh). That will get you your answer. I'm betting you end up needing it.
I towed our old 31' TT to the dlr @ trade in with the bars on (1100 lb TW) and could hardly stand the ride....bounce bounce bounce....took them off about 5 mi from dlr. what a diff.!!!

What is the hitch on the truck rated it? That will be the deciding factor if you need them or not.
Good point! With a 2" receiver mine is 12,500#max trailer weight and 1,250# tongue weight with WD and 6,000#trailer weight and 600# tongue weight w/o WD. I always(mistakenly) think of what the truck can handle and forget about what the hitch can do.
