I don't know about good RV parks around Corpus Christi, but here's a list of attractions I made while planning an upcoming trip down there:
  1. South Texas Botanical Gardens and Nature Center
  2. USS Lexington
  3. Texas State Aquarium
  4. Hans and Pat Suter Wildlife Refuge
  5. La Palmera Shopping and Leisure Destination
  6. Padre Island National Seashore
  7. Art Museum of South Texas
  8. Corpus Christi Museum of Science and History
  9. Mustang Island State Park
I haven't visited any of them so I can't confirm or deny their worthiness factor. Read their reviews on the internet and see what you think.

I stay at Gulf Waters about 20 minutes from Corpus in Port Aransas. It's right on the Gulf and the water is just over the dunes.

Oh, wheeeee! I'd love to give you an update on these attractions since I'm in Corpus presently... except I'm in the ER with DW. She has has a chronic cough for several days and now swelling in her legs. Since she has a rare kidney disease, we're not taking any chances.

Sent (I think)

You are not that far from San Antonio, go spend a couple of days there.
