Ok so now I am even more curious as to where/what the HDMI cable connection inside the cubby is used for??

What you describe sounds like the same factory installed setup in my 3051. There are two HDMI cables. There is one you can see that gets plugged into the Jensen. When plugged into the Jensen it carries the audio and video from the Jensen to the TV and at the same time carries audio from the TV back to the Jensen. It can be connected to either HDMI receptacle but will only send audio back to the Jensen if it’s connected to the one labeled ARC. In my case that’s HDMI-2.
The second cable begins in the cubby hole above the Jensen and the only part you see is the female receptacle. In my case I use a short (12”) HDMI cable to connect an AppleTV box to send audio/video to the TV. That so far unseen cable exits at the TV (alongside the Jensen output cable) and should be plugged into the non-ARC HDMI input on the TV....probably HDMI-1 or 3.
During operation of the AppleTV the audio and video is being sent to the TV. Then, that audio from the AppleTV is being sent from the TV back to the Jensen to allow it to output sound to all the speakers in the ceiling (and, if equipped, to the outside speakers). You have to set the Jensen displayed “source” to HDMI-ARC in order to have the proper operation.
FWIW, the AppleTV setup described above can alternately be used to connect an Amazon Fire TV, a regular cable or satellite TV box....or anything with an HDMI output.
Not related to the above discussion but I power the AppleTV from a small Duracell 320 watt inverter. That allows the AppleTV to be used for Direct TV NOW to be played on the TV while driving.
