Hot Water Heater Tempature

Can the temp be adjusted our stays Luke warm would like to be a little hotter??

The temp cannot be changed.
Your bypass valve is probably in the open position (handle in line with the water line) allowing the cold water going into the water tank to mix with the hot water coming out. It's usually located at the back of the hot water tank on a short line connecting the cold water inlet line to the hot water outlet line. Make sure the handle is turned crossways with the line.

I have 3 valves located behind the hot water heater, I have to get under the coach to get to them. Dealer says the middle must be closed and the top and bottom one must be open.

The dealer is correct. You should also check your outside and showers.
If the faucets are both on and the handle is closed, it will allow hot water to mix with cold water when demanded from any faucet.

My hot water is VERY hot so there is something going on with your heater.
You could also have a bad high limit switch.

There are two actually (but in the same place - one for the AC circuit and one for the DC and propane circuit)

They are located behind the two rubber reset button covers in the photo at the top. Under the rubber they look like the last photo.

DC/gas is the one on the right R/R and the AC one is on the left BLK/BLK

You can try running on AC only and see if the water is hotter than on propane.

They look VERY different so I would not switch them!
