Can I run my fridge off of shore power during the summer months when I am not using the RV and turn the house disconnect on to keep the converter from overcharging my batteries and making the cells dry?

Yes, only problem is the battery smooths the less than perfect DC produced by the converter.
As a precaution you can make sure all other electronics are off.

How long do your house batteries last?
Depends on how long my DW is in the rig.
24 hours she can use 40 gallons of water and drain 2 fully charged batteries to ZERO.
