I'm a new owner of my first RV. It's a 2016 Sunseeker MBS 2400R. We love it so far. My questions is what is the best way to charge a newer MacBook Pro while boondocking? Of course I know i can run the generator but is there some way without doing that?

Buy yourself a small 12vdc inverter, that's what I use.
We boondock about as much as we do full hookups.
Wish they had a 12vdc charger for them like the phones, maybe they do, I've not researched that.
there are available DC to DC 12V to 19V adapter/charger plugs for laptops like HP and DELL...
I do not know what voltage a MacBook uses. but I will bet that an Apple dealer has a cord for it... plugs in to the cig lighter for 12V and ups the power for the laptop's needs.
Or just buy a cheap 200-400 watt inverter... Harbor Freight has some pretty cheap ones in the $20-30 range. They are not very efficient though 50-60% maybe and will suck your battery down.
