Sounds like someone was clicking the camera buttons (up down arrows) on the screen to change the default camera when dirving. You should be able to twiddle those buttons to switch the backup camera back to default.

You might consider pulling the panel below your steering column off and tweaking with the connections to the multiplexer. The connections are clearly labeled on the box and it's right there behind the panel. I might try disconnecting the side view camera connections and starting the vehicle to see if the screen switches back to using the backup camera as its default. If it did then I would reconnect the backup cameras to see if the change sticks. Should take less than 10 minutes to do that troubleshooting test. I have had a similar problem in the past and I was able to clear it by shutting off the RV, letting it sit for 30 seconds and then starting back up but your instance seems to be a bit more stubborn than the one I experienced.

Bikeit, we have the same (blessing) problem when we take our 3yr old grand. Every time I sit down to drive after we camp with her I scan for switches and levers out of position. Hah, at least she learned "don't play with the beep beep".
