I would get to I 81 south then I 77 South to I 26 South to I 95 South in Florida take 301 to Orlando.

Plenty of year round campgrounds on way down depends on how long you want trip. In North Carolina KOA in Statesville, Wildlife woods in Sherrills Ford west of I 77 in Mooresville NC, Home of NASCAR. Most state welcome centers have Camping location maps.

Why would you take 301 instead of I95 to I4 to Orlando?

Suggestion on route from Toronto, Ontario to Orlando, Florida

Tip from a Pittsburgher that now lives in Charlotte
Make sure you don't miss the 19 cut off from I-79 (Beckley) I've missed it before and the cruise through Charleston WVA is scenic but will add a bunch of time to the trip
Pay attention to the areas of low speed limits on the 19 (Somersville?)
Some areas are notorious speed traps
Enjoy your trip

I've made the trip to Orlando more times than I can count. I79-US19-I77-I26-I95-I4 is the way you want to go.

As far as campgrounds, I recommend Ft. Chiswell RV Park(Ft. Chiswell, VA) and Coastal Georgia RV Park(Brunswick, GA), though that would make for a long 1st day and a short 3rd day. Both have several pull throughs (I assume you have a toad), so you don't have to unhook and they are reasonably priced.
