Is it ok to leave our cedar creek hooked up to the truck for one night with the slides out?

What are your concerns of leaving it connected?

It will shake and bounce alot more with the jacks up but won't hurt anything.

As long as you're somewhere close to level you should be fine. I did it in my driveway all the time when loading/unloading.

To answer your question, yes it's perfectly fine to leave your rig hooked to the truck and put the slide(s) out and not put the stabilizer/levelers down, provided you are 'somewhat' close to level.
It is never a good idea to deploy the slide(s) if you are on a twist/bind or way out of level.
You didn't mention the circumstances for doing this but if parked for loading/unloading again, it's common for folks to open a slide(s) as long as you are within reasonably level
But if you are stopping somewhere for a night, why wouldn't you want to stabilize the rig?
As long as you are not so far out of level that you are practically lifting the back end of the truck off the ground or over compressing the rear springs when stabilizing/leveling then it's is perfectly fine to deploy them and often done.
If we stop for a quick one nighter somewhere, I never unhook the truck but always stabilize. It's just better sleeping.

I'm sure you already know this, but you should unplug the umbilical cord from the truck to prevent draining your truck batteries.

On our 15 Silverado the power is disconnected when the key is turned off. So no battery drain.

Not every tow vehicle is created equally.
Some trucks have a relay that uncouples the TV's charging circuit from the system when the key is off. Some stay connected (even with the key off) and can cause the battery to drain if the umbilical is not disconnected from the truck.
You are going to have to determine what YOUR truck has and how it interacts with your trailer. One size does not fit all.

I have to admit not knowing this, yet. Only 100 miles towing and I connected to shore power before I found out.
My safe place is to park, level, extend, unplug, sleep.

We do that a lot but do put the stabilizers down just to take the bit of movement out of the trailer. When we unplug the truck/trailer cord, we always leave it hanging over in full view so it doesn't get missed the next morning!
