I know there's some other competition cooks on this site, and I'm always interested to see how others do and share ideas and opinions. Obviously not asking anyone to divulge their big secrets, but if you're a comp cook of any kind and want to play along by adding some pics or results of your competitions, let's share them here!!
We had our first comp of the season at the Roc City Rib Fest in Rochester, NY over Memorial weekend. Was also my first time trying out our new Wolf Pack toy hauler.
We got ourselves into and set up in our spot Friday AM with the Genesee River right behind us.
We didn't have much cooking to do Friday night so we watched some baseball under the awning.
With the nice weather we had 1 table set up in the garage during the day for preparing our turn in boxes and were able to leave it up at night when we dropped the beds.
Saturday was the World Bacon Championship. 4 bacon dishes and an open "rib off" category. We finished 9th overall out of 32 teams in the Bacon Championship and 15th overall out of 49 teams in the rib off.
One of the categories was "bacon weave". Had to be something cooked in a bacon weave, we went with a lasagna fatty, boxed up for the judges, it finished 18th
Another category was "Bacon scallop". Any dish using both scallops and bacon. We did a bacon alfredo pasta with the scallop on top served in bacon bowls. Took 4th place with this one!
And for the bacon dessert category we served Bacon Infused Maple Creme Brulee, finished 11th
Sunday was KCBS day. Our overall score of 29th out of 50 teams wasn't great, but we had 2 top 10 calls, which against this field that includes some of the best on the East Coast, we were very happy with.
9th place KCBS chicken
3rd place KCBS ribs
Overall it was a great weekend of cooking and breaking in the new camper and always great to take home some hardware
The best part of having the new camper, a clean toilet and a shower, anytime we wanted it!!! Which was huge with the 90 degree heat and 90% humidity we had all weekend.
