Easy job, demand the dealer replace the counter top with a new one. ( with a different tech doing the work)
Also have the tech fix the scratch in the wood trim.

Replace, replace, replace....they can easily get a replacement counter top direct from manufacturer. I would be concerned that using a wood filler and resurfacing won't last long term....mind boggling that a dealer would do that...

The kicker is the piece that they got to replace it isn't even the right size. It is about 1/4" to narrow. I thought it would be easy to just replace that front strip. WRONG! Should have just dealt with the chip.

GOOD LUCK. You are correct you should have stuck with the chips. but at least they owned up to the initial. we have chips in our new 17 toyhauler and FR doesn't want to have anything to do with it even though they were noticed prior to leaving the dealership.
they sure did make a mess on yours.

I'm scared to have any warranty repairs done, unless its a major system fail. Just fix it yourself, or hire a local, qualified, person to do it.

Find a local small laminate shop and get a reference for a laminate repair person.
I am in the business furniture industry and we have a guy that can repair chips and scratches so well that you can't find the mark.
Stop messing around with the unqualified personnel at your local RV shop.

I usually do things myself but this was one of those things we pointed out on PDI so they were taking care of it. I've contacted forest river about sending me the kit to fix the dometic blizzard A/C and they tell me they will only send things to a dealer. I really don't feel comfortable with them cutting a hole in my ceiling and adding another return vent.

If you have concern they will do more damage replacing it, then you are going to have to decide how you want to approach fixing it and most likely, that onus will be on you.
If they have now offered to replace it, it seems that is what they are willing to do.
You could possibly suggest taking it to a cabinet/countertop shop but now you are asking them to go even farther beyond what most dealers are willing to do.
Your relationship with your dealer is important going forward.
I would give them the opportunity to make it right.
If that doesn't happen, find another dealer or contact the factory for repair/replacement suggestions.

"They are saying they will replace the entire countertop but I'm not sure I want the entire thing ripped out of the camper. " The good part of this is that they have taken responsibility and offered an acceptable solution.
====================
"I'm not sure I want the entire thing ripped out of the camper." First, stop using your imagination and words like "ripped out." You should be talking to the mfg and asking them about the process that would be used to replace the counter top and sharing your concerns that your RV might suffer more damage during the process by the dealers unskilled service technicians. One alternative is to take the unit back to the mfg and have them do the work...something more experienced owners are not reluctant to do.
There are also skilled RV upgraders and refitters that you can also talk to and get an estimate from. Again ask them what process they would use and if they have experience with similar units.

Don't take things so literal and don't assume people have no experience because of a low post count.
Thank you for your advice but you are a little condescending.

Under warranty FR sent a new countertop for my kitchen and the repair shop replaced it in less than a day. I, of course, did not leave the RV in shop while the countertop was on order.

Philos3 in my opinion was not being condescending.
The dealer tried to repair the top and did a bad job. We suggested to you what needed to be done.
The only way to fix it is to to get a new counter top from the factory, remove the damaged one and put in the new one.
Despite your "low post count", I am sure you have the experience to replace it yourself.
The last one I did took about 2 hours.
Keep us posted.
