I don't believe the NEC applies to low-voltage wiring.
There's an old saying about standards: "The great thing about standards is that there are so many to choose from."
The most common usage you will see is red=positive, black=negative. Look for example at the snap-fastener on the 9v battery your home smoke detector. Or look at your car battery. This is nearly universal throughout the world but...
For some reason, the RV folks had to be different. White is negative. Positive could be red or black.
