I'm thinking just as good or better, depending on the thickness of the pan, whether the surface area is large enough to spread out the heat, and it's not covering the holes along the edges of the bottom of the oven. Sounds like experiment time! The important thing is pre-heat time, be it with the stone, or iron. Have to allow enough time at your set temperature for all the material to be evenly and consistently heated, then the oven can be set to a lower flame just to maintain this temperature. With my thick pizza stone at home, that means 30 minutes pre-heat time minimum. It's not like you use the oven a lot anyhow, may as well do it right and get good results.

We have a convection oven-microwave. Use the pizza stone for pizza, bread, cookies. It hasn’t broken in 3 years. It travels on its side jammed against cabinet wall under the sink.

Just curious - has anyone figured a way to set the oven temp lower than what the factory gives you (I think our lowest temp is 350)?

Just park it in the 🌞 sun over here in Yuma during the summer months...
Probably would be around 200 degrees at minimum...

I'm always amazed that people CHOOSE to live in conditions like that. Like people who stay in Minnesota. Maybe they've never been anywhere else and just accept it? Not a big fan of climate extremes. I went to a driving school in Nevada summer of 2015. The car thermometer was reading 113F mid-day every day for a week. Just breathing that hot air was uncomfortable.

I use a round cast iron griddle - I'd have to go measure but it's about 9-10" and has a handle. It's the perfect size as none of the holes are covered. I use my oven most every time we take the camper out. I bake cookies, brownies, cornbread, whatever with perfect results. Putting it in the oven is part of my set-up routine and storing it under my skillets is part of the packing up routine. It has the added advantage of using it as it was intended - as a griddle on the stove top, grill or over the fire.

Ours is here and it serves us well. (Unglazed 13x13 floor tile wrapped with 3-4 layers of foil)
P.S. I leveled the rack after I saw my posted pic.

Does it matter if it's glazed or not? Seems like glazed would be easier to clean.

Early on, the advice was to use unglazed because the glazed would____?___ (something). We wrapped ours in foil to keep the pieces together when it cracked (as many/all seem to do). We dont ever clean the tile itself because of the foil. If its not serviceable, we replace the foil.

Mr.Dan's picture (post #51) is where I have mine. Yes, you can broil on the bottom below the burner but watch it carefully as it is very close.

Glazed tiles MAY contain lead, and MAY release this lead into your food when heated, if you are cooking directly on the stone, like you would if making free-formed bread loaves or pizza. I don't know if that's the case if the food does not contact the stone, I doubt there are lead vapors floating around, but I don't know.

Interesting. I figured lead was long gone from everything that we touch but apparently it still may be used according to my quickie google search.
