If it's a dual powered version (gas and electric), it also has two thermostats, one each for gas and electric. They are under the black rubber covers on the face of the water heater that say RESET.
It sounds like maybe the right hand one (the gas) is not functioning correct and thus cutting power when the water temp reaches its level.
You might could remove the cover and see if it is loose and not contacting the tank correct to sense the heat. It could also just be faulty.
They are not hard to replace, but you have to make sure you have the correct one for which power source you are replacing (either the 120 volt electric heating element, or the 12 volt propane). The two are NOT interchangeable.
