If the HW tank was indeed bypassed-- it wouldn't have had any antifreeze. Think you probably missed the bypass valve?
The best way to winterize the lines is to open one faucet at a time, closing it when the faucet has deep pink color. Same process for all faucets! Don't open the faucets again until you dewinterize.
