Having a hard time getting the water temperature just right when showering, the water is too hot or too cold, tried every day playing with the handles and couldn't get it

Not just you - everyone (including ourselves) has struggled with same. It is a tankless, "on-demand" water heater, and as far as I know, they all run off LP (propane). But in any case, the trick is;

(1) Turn hot water on, full, all the way.
(2) Regulate temp with the cold water, and finally,
(3) Leave it (water) running the whole time you are showering. I.e., do not turn off water between sudsing and rinsing. Just let it run, like you were at home.

The last one kills me because decades as a dry camper has trained me otherwise. But the above sequence has allowed me to shower w/o scalding myself, and this 5th wheel carries >3x more water than our previous. We haven't run out of water yet. Our rig has the extra freshwater tank option, so in principle we have 160 gallon capacity. Crazy amount; that is 1,300 lbs of water!

Our tankless water heater does the same, sometimes it can be regulated, sometimes not. We just had the "pressure" switch go TU, dealer got us a new one. In the mean time I just hooked the two wires running to it together and continued on. Service manager says he wouldn't own one, I agree but we are stuck with it right now.
Do like it when you are glamping in an RV park with unlimited water, long hot showers That doesn't happen too often for us, dry camp most of the time, that's why we bought a TH with 160 gallon of water under it.

I use the hot water nob only. Too hot. Turn the hot water on more. Too cold. Turn the hot down. If too hot with the hot water all the way on use the flame adjustment on the wall to turn flame down . Turn up if too cold. Took 2 years to figure it out but works great now. It is a Girard model btw.

My Shockwave has an Atwood tankless water heater and we only remote camp.
Only use the hot water knob in shower, "ON" all the way. Adjust water temp with control in water heater cabinet (red knob). We can now shut water off during shower and turn back on without issue of too hot and too cold.
