I have been considering the LED lights.

2 6 volt or can I daisy chain 2 12 volt? Is one way better than the other?

You can set up two 12 volts and/or 2 6 volt batteries or both in separate banks with a switch to control them. Lots of options to consider but basically the 2- 6 volt option gives you more power. I would charge your original battery and see of it is good then add it to your system. And I would get a battery tender which is a 4 stage charger to really charge your batteries before you start out next time.

I had a similar experience my first time dry camping with DW and stepson. We used all of our fresh water the first day. I couldn't believe it and thought something was wrong lol. Now we carry a 6 gallon to refill the fresh tank and a 12 gallon tote that we use to "dump" the grey tank each morning. We also had to change our water use habits to be more conservative.

+1 to that. The specs for our TT say 42 gallon fresh capacity. However, the placard on the TT lists the weight of a full tank as 300 lbs. I did the math... 300 lbs at 8.3 lbs per gallon is only 36 gallons. I couldn't figure where the "extra" 6 gallons were until after reading this thread. I guess they "hide" 6 gallons in the hot water tank on the spec sheet.
