I don't have a 360, but a 390 with a really similar living/kitchen layout. Mine came with a Fantastic Fan w/ remote control directly over the stove.

Mine works fine moving air out. Less moving air in. I think has to do with blade design

Fantastic fan?

I have two of these fans and would have have any others (third coach with them) My kitchen fan runs a lot it is on a auto setting comes on when it is 85 degrees inside the coach and runs until it cools down, and it works "perfect" and i have one in the bath, and do not turn it on while on the toilet as tow things happen 1) you will dislike a lot, you will get all the odor from the toilet while on it, and then from the black tank when you flush, but 2) is it pulls so much air if you close the door it will suck so much air underneath the door that it is uncomfortable and make a mess also with all the towels getting messed up papers being blown around and more.

SO my question is "what are you really having an issue with?" it is the amount of air (check the speed setting) some noise issue (well fans make noise) or something else?

B, when we use ours in above the kitchen, I can set it on the highest speed setting and feel literally no air move. We have the new Maxxair Mate Vent Covers on and assumed that they may have some type of blockage preventing the air from moving, but I'll have to check next time I'm ontop of the rig.

You need to have a window or door open to get movement of air

Already done. Anytime I run the fan I have either 1 or more larger windows open. Still very little if any airflow.

I can't feel it going out, but can blowing in. When blowing out, you can feel the air coming in an open window.

My issue was the vent cover I was using. After watching this video we changed vent covers and it works as expected now.

Amazing what a vent cover can do! I have louvers over my sliding side windows. Can open the window 6 inches and keeps the rain out. You can feel the fans pulling the air in the vents.
