We want to get rid of the water filter so when I looked at it I found that the fitting has a clamp on the pex tubing and the fitting it self has a putty type stuff sealing it to the filter housing how is the best way to unhook it? Do I just cut the pex tube or what?

Yes, cut it just behind the clamp.

I had to cut mine off too. Use Sharkbite fittings to assemble it.
