Easiest is to get two 1/2 PVC 1/4 turn valves and they'll screw right onto the threads that the caps were on. No crimping, no PEX. Some pipe tape and screw them on.

I wanted to do that, but my drains are so close to the edge I didn't have much room to spin anything on. I might have found a way to make it work, but I probably just needed a reason to justify my expense of buying a PEX crimping tool.

This should work, just use plenty of Teflon tape.
