Water Heater adj. thermostat/ City water regulator?

The water heater temperature in our Forester is way to HOT for the DW and she wastes a lot of water trying to adjust it and not scalding herself. My old Winnebago has the Atwood 6 gallon and I added the adjustable thermostat, it brought the temperature down from 155 to 117 and the DW was happy. Is there any reason why the adjustable thermostat wouldn't work in Forester's water heater. Only difference I can see is the 110v probe to heat it electrically. The lower temperature saves on propane too!
We never ran out of hot water when the two of us showered one right after the other.
Also, what shoreline/city water pressure regulator does everyone use, 35-45 or 45-55 psi. Would the lower psi regulator cause problems with the water pumps back feed when on city water? I don't understand how that works.

If you have a suburban W/H the temp regulator is a disk that on the skin of the tank. You will see two with a wire connecting them for electrical and 12v. They do come in different temps. I have never seen an adjustable one. As far as water pressure I have an adjustable one and leave it set at 55 PSI, very rarely do I ever see 55 PSI, most CG run at about 45 psi. To me 45 PSI is to low. I always carry a rain bird gauge that I test to see what the act. pressure is before I hook-up the water regulator.

Mine is definitely an Atwood. Atwood makes an adjustable thermostat to replace the disk.
