I don't turn ours off while camping. You absolutley don't want it on while traveling, but when parked it is fine to leave on. Since it only runs when you have demand, it won't run or make any noise unless somebody is running the water.
I leave it on at night so if DW or the kids use the bathroom, they can flush the toilet. I think the toilet itself is louder than the pump. It won't hurt to turn if off at night, but I don't think it is really neccessary either.
